Heat in a medium skillet over medium heat until fragrant:
1 tablespoon olive oil
Add:
1/2 cup chopped onions
1 clove garlic, minced
Cook, stirring, until the onions are tender but not browned, 5 to 7 minutes. Remove to a medium bowl and add:
1 pound ground turkey or ground chicken
1 large egg
1/4 cup grated Parmesan cheese
2 tablespoons milk
2 tablespoons dry unseasoned breadcrumbs
1 tablespoon tomato paste
1 tablespoon chopped fresh basil, or 1 teaspoon dried basil
1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
Thoroughly combine the mixture, then form into 1-inch balls and roll in:
1/2 cup cornmeal
Heat in a large, heavy skillet over medium-high heat until fragrant and hot but not smoking:
2 tablespoons olive oil
Add the meatballs and brown on all sides, about 10 minutes. Serve with a vegetable or with pasta and tomato sauce.
